I bought this book when Aidan was younger and found it so informative and clever, I reference it all the time when it comes to Aidan’s meals and learning about his nutritional needs. One of the recipes I’ve been keen for him to try was the Chicken & Apple Meatballs. Now that he’s becoming more coordinated and feels confident enough to feed himself, the meatballs seemed perfect, food he can play with and eat.
I mixed 500gms of chicken mince, one peeled grated apple (squeeze gratings in paper towel to lose the moisture) and about a cup of fresh breadcrumbs in a bowl. I added a pinch of salt, pepper and cumin for flavour. I also finely diced one onion, sauteed it and added it to the bowl. I mixed it up with my hands then made lots of little balls, rolling them in plain flour before lightly frying them in olive oil.
Aidan LOVED them. I think he liked that he could feed himself, roll it about the table and not to mention the taste. He ate five of them for dinner that night! I keep them in the fridge and just pop one or two on a plate for lunch or dinner along with whatever else he’s having… and I have a couple myself.
